No Bake Paleo Granola

So I decided it would be a good idea to make pecan-raisin coconut clusters today. I mixed up what I thought might be good in them, formed them into cute little clusters, and stuck them in the freezer. Fast forward 5 minutes, they all fell apart into this delicious granola that we can’t get enough of! It’s sweet, but low sugar because I used stevia, and it’s full of good fats. This recipe’s also super easy, and it literally took about 20 minutes! Enjoy!

 

No Bake Paleo Granola

Serves: 4 servings
Ingredients
  • pecans – 1 cup, chopped
  • raw sunflower seeds – 1/2 cup
  • raisins – 1/4 cup
  • unsweetened coconut flakes – 1/2 cup
  • ground cinnamon – to taste
  • ground nutmeg – 2 pinches
  • coconut oil – 1/2 cup, melted
  • vanilla extract – 1/4 teaspoon
  • pure maple syrup – 1/4 teaspoon
  • stevia to taste
Instructions
  1. In a large bowl, combine the pecans, sunflower seeds, raisins, coconut, stevia, cinnamon and nutmeg and mix well. Stir the vanilla and maple syrup into the melted coconut oil. Pour the coconut oil mixture into the dry ingredients and mix well. Spread out on a greased baking sheet and place in the freezer for 5 minutes. Use a metal spatula to break up the pieces and store in an airtight container in the fridge (if you don’t devour it all first!).

    In your granola recipe you mention about using Stevia, however, there is no mention of it in the ingredients nor the instructions. How much Stevia is required and when is it added?

    I just found your site and am excited to try some of your recipies.

      I believe it is just stevia to taste.
