30 Minute Stuffed Acorn Squash

30 Minute Stuffed Acorn Squash | Cook It Up Paleo


Fall comes early here in southern Wisconsin, and I couldn’t be more excited.  Hunting season is just around the corner.  I really think this is the year I’ll land a nice buck.  We just got a scope mounted on the new rifle, and I’m daydreaming about how awesome this stuffed squash would taste with ground venison.

But for now, it’ll be stuffed with beef, and that’s ok too because this dish is delicious.  This paleo stuffed acorn squash really only takes 20 minutes to make; but it takes 30 if you’re drinking a pumpkin spice latte while you’re making it, which is totally acceptable.

I love the combo of sweet squash, savory beef, and tender veggies in this super-simple dish.  It’s awesome for breakfast, lunch or dinner.  It’s also easily multiplied to feed the whole family.

 

30 Minute Stuffed Acorn Squash

Ingredients
  • 1 acorn squash
  • Bacon fat or [url href=”http://www.amazon.com/gp/product/B00NJYM12O/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00NJYM12O&linkCode=as2&tag=coituppa-20&linkId=OMDKFMDIKPUPN4IQ” target=”_blank”]lard[/url] for sauteeing
  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • 2 cups sliced mushrooms
  • 1/2 pound [url href=”http://www.amazon.com/gp/product/B00HSPBKQS/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00HSPBKQS&linkCode=as2&tag=coituppa-20&linkId=WMGC632MBVNTAHQ4″ target=”_blank”]ground beef[/url]
  • 2 teaspoons [url href=”http://www.amazon.com/gp/product/B00269PM6K/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00269PM6K&linkCode=as2&tag=coituppa-20&linkId=6ECJJ7YZSPZ26C2T” target=”_blank”]curry powder[/url]
  • [url href=”http://www.amazon.com/gp/product/B000E6BRUW/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B000E6BRUW&linkCode=as2&tag=coituppa-20&linkId=XXJSUI4CPSE26VMG” target=”_blank”]Salt[/url] to taste
  • Freshly ground [url href=”http://www.amazon.com/gp/product/B0049J2N9E/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B0049J2N9E&linkCode=as2&tag=coituppa-20&linkId=NSRIGFMPU5EEBYAJ” target=”_blank”]black pepper[/url] to taste
  • 2 cups chopped fresh spinach or other green (arugula, kale, etc.)
Instructions
  1. Cut the squash in half and scoop out the seeds. Microwave on a plate for 7-8 minutes, or until tender.
  2. Meanwhile, melt a little bacon fat in a skillet over medium heat and add the onion, garlic, mushrooms, beef, curry powder, salt, and pepper.
  3. Cook, stirring often, until vegetables are cooked and beef is browned.
  4. Add the the spinach and cook until it’s just wilted.
  5. Scoop the filling into the squash halves and serve.

    Does this have a strong curry taste? Can you use less garlic and still get a good flavor?

      The curry taste is not strong; and yes you can use less garlic.

    I’ve never microwaved or even cooked an acorn squash before. Does it matter how you lay it to microwave it?
