When I made this paleo banana bread recipe, we were overrun with bananas that all decided to ripen together.  Like a few pounds of them.  No one in our house really likes to eat bananas just by themselves; oh no; we must have freshly baked banana bread.

Even my dad, who really doesn’t like “fruity desserts,” really enjoys a freshly baked slice of banana bread.  However, my dad is allergic to egg whites.  I knew that I wanted a paleo banana bread recipe that he could eat, but was also absolutely delicious.

This paleo banana bread recipe definitely fits the bill! It’s dense, moist, and banana-y.  I also love that it’s only sweetened with fruit.  It didn’t last very long in our house.

These banana bread slices are so delicious alone or with softened butter or nut butter.  Coconut butter would be amazing too.

Paleo Banana Bread Bars | Cook It Up Paleo

 

Banana Bread Bars (No Egg Whites)
Recipe Type: Cookies/Bars

Prep time: 20 mins
Cook time: 30 mins
Total time: 50 mins
Serves: 8 inch pan
Ingredients
  • overripe bananas – 3
  • egg yolks – 3
  • chia seeds – 2 tablespoons
  • blanched almond flour – 1-1/2 cups
  • coconut flour – 2 tablespoons
  • ground cinnamon – 1 tablespoon
  • baking soda – 1/2 teaspoon
Instructions
  1. Preheat oven to 375 degrees Fahrenheit and grease an 8 inch by inch glass baking dish coconut oil.
  2. Mash the bananas in a large mixing bowl and mix in the egg yolks and chia seeds. Let sit for 10 minutes.
  3. Stir in the almond flour, coconut flour, cinnamon, and baking soda.
  4. Scrape the batter into the prepared baking dish and bake for 30 minutes, or until the bread passes the toothpick test.
  5. Cut into squares and enjoy, preferably with softened butter.

    these look delicious! any substitution suggestion for the banana…. maybe applesauce?

      Applesauce, pumpkin, squash, zucchini or carrots (add some maple syrup)…. run wild 🙂 I would say about 1-1/2 cups of pureed or grated fruit or veggie to sub. If you use zucchini or carrots, use a little less and make up the difference with maple syrup or honey.
