AIP Banana Muffins (paleo and vegan)


I’ve made many, many versions of AIP banana muffins before I came up with the perfect recipe.  But it was worth it; these delicious muffins are fluffy and soft and they rise and cook through and everything! Plus there’s no gelatin involved, so they’re vegan too!

The secret to the amazingness of these muffins is plantain flour; it captures all the awesomeness of pureed plantains for baking, but it powdered form! I would actually venture to say that plantain flour yields better results than cooking with raw plantains, at least for some applications.

These make a yummy addition to breakfast or the perfect afternoon treat; I’ll definitely be making them again soon!

Ingredients
  • 4 bananas

  • 1/4 cup coconut flour (I only recommend [url href=”http://www.amazon.com/gp/product/B00BSZBEAG/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B00BSZBEAG&linkCode=as2&tag=coituppa-20&linkId=JM6B7VG3FZTKH65J” target=”_blank” rel=”nofollow”]Anthony’s[/url] and [url href=”http://www.amazon.com/gp/product/B000KENKZ8/ref=as_li_tl?ie=UTF8&camp=1789&creative=390957&creativeASIN=B000KENKZ8&linkCode=as2&tag=coituppa-20&linkId=YZPOLDLZNFRBPFCC” target=”_blank” rel=”nofollow”]Bob’s[/url])
  • 1 teaspoon cinnamon
  • 1/2 teaspoon baking soda
Instructions
  1. Preheat the oven to 350° F and grease a muffin pan.
  2. Mash the bananas with the coconut oil and coconut cream.
  3. Add the remaining ingredients and mix well.
  4. Scoop into 5 muffin cups.
  5. Bake for 25-30 minutes.
  6. Cool and enjoy.

    Can you substitute ripe plantains for the bananas?

    Love these! I used Banana flour instead of plantain because it’s tricky to source some products in Australia. They turned out so light and fluffy. I didn’t even convert the measurements. Will be a regular because they are so easy aswell

    Tried this today Heather as my daughter found this recipe and wanted me to make it for her. She’s missing her breads food having been on the aip paleo diet for over a month. We don’t get plantain flour in Singapore but I have used Otto’s Cassava Flour which Sadie shipped to me. Happiness for my kid as she gets to eat tortillas with this flour, anyway the muffins turned out delicious. It is dense though unlike yours and I suspect it is due to the different flour used or the amount of coconut oil. Does your muffin look like it is being fried in hot bubbling oil during baking? I see hot liquid oil bubbling around the sides of the muffin while it is cooking. Nonetheless very yummy and hits the spot for something ready and makes my kid smile with happiness. Thank you for the recipe. I’d love to try more of your future aip breads recipes sans gelatin if possible. Thanks.
