Chocolate chip cookie bars are my childhood in a cookie. My mother used to make these deliciously amazing non-paleo blond brownies. They were so chewy and sweet and awesome. She would make them for every party and picnic.
Now that we’re paleo, I sometimes crave her amazing cookie bars. What can I do? Get in the kitchen!
I’m slightly obsessed with Organic Gemini tigernut flour. I love it not only because it’s super healthy (full or resistant starch), but because the fiber in it acts as a binder in recipes, resulting baked goods with a really nice texture.
These soft and chewy tigernut flour bars take just a few minutes to whip up and only require one bowl! They remind me of my childhood while being full of nutrient-dense ingredients. Yum!
- Preheat oven to 350° F.
- Grease an 8 inch by 8 inch glass baking dish with a little butter.
- In a mixing bowl, cream together the butter and coconut sugar
- Mix in the eggs
- Stir in the tigernut flour, baking soda, and salt.
- Fold in dark chocolate.
- Transfer to baking dish.
- Bake for 20-25 minutes.
